I have both a PS3 and an Xbox 360 and wondering which would be best out of Dirt 3, Forza 3 and GT5, or whether I should wait for F1 2011?
For my money, DiRT 3 is probably your best bet. It nails the sweet spot between simulation and good old fashioned fun - with an epic Gymkhana mode added for good measure.
If you prefer your racing to be bleeding edge, you may want to grab GT5 as well. It's an incredible simulation, though the focus is definitely on realism over actually having fun.
And F1 2011 is going to be sweet. We've got a bunch of new details and interviews in the pipeline, stay tuned!
Do not go for either Forza 3 or GT5. If you want a racing game right now, get Dirt 3. I would personally wait for Forza 4.
Cheap answer, but it depends what you're looking for from a racer. If you want a true simulation, and you have a wheel for your PS3 I'd go with GT5.
If, however, you're looking for something a little bit more arcade-y, then as the others have already suggested, DiRT 3 is your best friend. The sheer range of modes, the multiplayer stuff, the Gymkhana, YouTube functionality, it is stuffed with excellence.
Forza 3 is the cheapest option, and still a fine choice, but you'd probably be better holding out for Forza 4.
And, as Jon says, F1 2011 is shaping up very nicely indeed...more on that over the next couple of days. Codemasters are on fire at the moment!

its the most underrated game,Split/second also is way to underrated!
I would go for gran turismo 5 if you want simulation - it has the most accurate tyre simulation and handling.
If you prefer a more arcade racer then you won't go wrong with Project Gotham 4 (£5 now-days).
If you want somewhere in between then look at Shift 2 Unleashed...I am currently playing it now having finished GT5.
Also, don't forget Dirt 3 if you want rally.
Just a note - I also had forza 3 but just couldn't get on with it - pretty dull/depressing game, its well made but there is no personality (sold it). I prefer GT5 and shift 2.

Need For Speed: Hot Pursuit is well worth a look as well, especially if arcade stylings are more to your favour. It is, though, essentially a bigger, better Burnout Paradise under a different name. Which is fine.
