UFC fights usually consist of between three or five rounds of 5 minutes each, however it's very unlikely that you have to wait until the later rounds to find out the outcome because a KO usually occurs within minutes of the first bell being rung.

There's a huge range of fighters from different weight divisions for you to take your pick from, including Quentin 'Rampage' Jackson, who are trained in various martial arts from around the world. The fighters have been recreated in an amazing amount of detail and the damage they sustain is mirrored by the bruising and cuts that show up as the match goes on. You'll also be able to pick up individual beads of sweat falling down their bodies, which adds to the feeling that this is a truly energy draining occupation.
Button bashing'll only get you so far in this game and it's not wise to do so because you're opponent's just waiting for you to make the smallest of mistakes that they can take advantage of in order to send you hurtling to the ground. Standing combat is probably where you'll spend the majority of the game, but you can also grapple your opponent to disable their arms and dish out some punishment with your knees, or wrestle them to the ground to finish them off with an unforgiving submission.
This is without a doubt one of the best fighting games that I've played in a long time and I'd recommend that you check it out if you get the chance.
